Rujak – A Salad of tropical fruits spiced with Herbs, ginger flower and tamarind
Ingredients:
1 Cup sliced Jicama (Chinese Turnip)
1 Cucumber
1 Starfruit
1 Green mango
1/2 a pineapple
1 cup chopped snake beans
1 cup bean sprouts (cekur)
5 resurrection lily apples (jambu)
Sauce
3 cloves garlic
1 or 2 red chili
3 tsp palm sugar
1 cup tamarind paste juice
2 tsp grated torch ginger bud
1 tsp grated kafir lime rind
3 kofir lime leaves chopped
4 kalamansi lime
sea salt
1/2 cup raw ground nuts roasted and crushed
Method
Prepare all the vegetables for the mixing bowl.
Make the sauce
Using a mortar and pestle (Lesong), ground the chillis, garlic, kafir lime leaves, torch ginger and some of the peanuts. Add the palm sugar and tamarind juice and lime juice. Slice the limes and blend together in the sauce. Season with salt and some dark soya sauce to taste.
Putting it together
Place all fruits and vegetables in a bowl. Add in the beansprouts and sliced kecur leaves. Mix in the sauce and combine well. Sprinkle the peanuts over the salad and Serve.
