Brazilian recipe from Ms. Rossita Amorim De Carvalho’s mother

We need,
1 pack of black turtle beans
1 1/2 onion
5 cloves of garlic
3 bay leaves
Salt
5 tsp Cooking oil
Smoked Sausage(optional) not spicy (can be bought at cold storage)

Getting ready…
Wash the black beans 2 or 3 times
Soak black beans previous night or for 30 min
Chop fine onion and garlic
Cut the sausage into thin rounds

Let’s get started
Keep pan for heating, add 5 tsp of cooking oil,
Add Garlic and onion sauté (fry) till golden brown.
Add the chopped sausage and sauté for few min
Now add the black beans with the water, salt and the bay leaves.
Let it simmer with cover leaving out little space to release steam.
Let it cook on slow fire for about 40 min to 1 hour
Untill the beans are finger soft
Serve hot with rice, stir fried carrot and cabbage.
